The Sweet Tooth

  
 I like sweets but was never crazy about them. But it all changed when i was pregnant with Varun. Right from day one all i wanted was sweets. In the first trimester its usually advised not to consume sweets but i went crazy with my cravings & it was around Diwali time. So there was a box of sweets that I devoured without PV's knowledge. I used to wake up in the middle of the night to eat them. Finally he discovered it & threw the whole box 😦. There were only few things that didnt trigger nausea & they were Dosa+egg, Sweets, kadala mittai & Coconut water. So i basically lived the nine months on these.
    Now coming to present day, Varun cannot resist sweets & along with him even i cant stop eating them now. So there is always kadala mittai at home. An astrologer who has not met him  at all once said that Varun was born to eat sweets. Likewise if there isn't any sweets lying around he'll eat Sugar, Jaggery or Palm candy. He just cant resist them.
    So last weekend when we went vegetable shopping, we saw the beautiful red carrots & all i could think about was Carrot Halwa. So when i asked him can we buy & make halwa with this tomorrow he was all game. I searched for an easy recipe that doesn't take so much time in the kitchen & ended up with the OPOS Carrot Halwa videos.
    Now OPOS is OnePotOneStove cooking method, that is quick & easy to make with the Pressure cooker. Searched multiple links & ended up with one that suits me & the result was just dessert heaven in 20 minutes. Here goes the recipe.

Recipe:
2 cups - Grated Carrot
1/2 cup - Sugar
1/4 cup - Milk powder
3 Tbsp - Ghee
1/2 tsp - Cardamom powder
Nuts/Dry fruits sauteed in ghee

1. Take a pressure cooker & start layering.
2. Spread ghee on the bottom.
3. Add the carrots with no space.
4. Dump the sugar, milk powder & cardamom powder on the top.
5. Close & keep in high flame for 5 to 6 whistles or till u smell the caramelization & then off.
6. Relieve the pressure immediately, open the cooker & mix everything along with the fried dry fruits.

Tada Carrot Halwa ready!!!
